Our Story

A Rainbow of Purpose and Flavor

At the heart of every bite we bake is a story of love, resilience, and imagination.

Leo Burkatov wasn’t just looking for work—he was searching for a way to live a life that embraced both purpose and parenting. As a single father raising his curious and creative daughter, Lia, Leo knew his next step needed to be more than just a paycheck. It had to be something meaningful—something they could build together.

In their small kitchen, they discovered joy not just in the sweet scent of dough rising, but in the simple moments of kneading, shaping, and laughing side by side. Lia, with her boundless imagination and love for all things magical—especially rainbows and unicorns—inspired something truly unique: a colorful twist on tradition.

With Lia’s whimsy and Leo’s heritage, an idea was born. Rainbow bagels to reflect her vibrant spirit. Ukrainian bubliks—a nod to Leo’s & Lia’s Ukrainian roots, slow-fermented and lovingly baked.

Together, they created more than a bakery—they built a business grounded in family, inclusivity, and the belief that food should nourish both body and soul. Every bagel and bublik carry the imprint of their shared journey and the simple truth that good things rise when made with care.
